Easy Morning Chocolate Zucchini Muffins

Yields1 Serving

 0.50 cup granulated sugar
 2 tbsp canola oil
 2 tsp vanilla extract
 2 eggs
 2 cups white whole wheat flour
 2.50 tbsp cocoa powder
 0.25 tsp kosher salt
 1.50 tsp baking soda
 2 tsp ground cinnamon
 1.25 cups unsweetened applesauce
 2 zucchini, medium sized, grated
 0.75 cup dark chocolate chips
 0.50 tsp cocoa powder (optional for sprinkling on top)

1. Preheat oven to 350 degrees F. Line muffin pan with muffin cup liners or spray lightly with nonstick spray.
2. Whisk together sugar, oil, vanilla and eggs in a medium bowl. In a separate bowl, whisk together flour, cocoa powder, salt, baking soda and cinnamon; add to wet ingredients and mix until just combined. Lightly fold in applesauce, zucchini and chocolate chips. Pour mixture into cup-lined muffin pans. Sprinkle a dusting of cocoa powder on top.
3. Bake for 15-18 minutes, or until muffins are cooked through. Makes 24 muffins.
